The Happy Home Cook: Meyer Lemon Frozen Margarita

I used freshly-picked Meyer Lemons for this Meyer Lemon Frozen Margarita. This lemon variety is sweeter than the regular tart ones, and are close in citrusy flavor to the Filipino calamansi (calamondin). Meyer lemons are in season from November to March and are great for cooking and baking. And for whipping up a pleasant frozen Margarita cocktail, these lemons are the best. This was inspired by a recipe from my cookbook How To Cook Philippine Desserts, Cakes and Snacks (Amazon.com).

Equipment

·       1 Blender

·       Margarita glasses

Ingredients

·       2 Tablespoons coarse salt

·       4 to 5 whole ice cubes

·       ¾ cup tequila

·       ⅔ cup juice from Meyer lemons

·       ½ cup corn syrup

·       fresh slices of lemon, for garnish

Instructions

To prepare Margarita glasses:

1) Moisten the rims of the Margarita glasses with cold water. Then dip them immediately in a small bowl filled with coarse salt.

2) Chill the glasses in the refrigerator for at least 30 minutes.

To mix the Margarita:

1) Combine the ice cubes, tequila, lemon juice, and corn syrup in a blender.

2) Pulse and blend for 2 minutes until the concoction is smooth.

3) Pour the frozen cocktail immediately into the Margarita glasses. Garnish with fresh lemon slices. Serve chilled.
