Roasted Brussels Sprouts With Tamarind Glaze

Ingredients

2 lbs Brussels sprouts
1 ½ tablespoons tamarind paste/concentrate
2 teaspoons fish sauce
1 tablespoon grated palm sugar (substitute with brown sugar)
1 tablespoon water
Olive oil

Procedure

1) Preheat oven to 425 degrees F.
2) Prepare the Brussels sprouts. Remove the yellow and damaged leaves, trim the ends and cut them into halves.
3) In a bowl, coat the Brussels sprouts with olive oil. Transfer the sprouts into a baking sheet, arranging them in a single layer.
4) Roast the sprouts in the preheated oven for 20 to 25 minutes or until they are fork tender and caramelized.
5) Meanwhile, prepare the glaze. Mix the sugar, water, tamarind paste and fish sauce. Microwave for 10 to 15 seconds or until the sugar is melted. Set aside.
6) Transfer the roasted Brussels sprouts into a serving bowl. Drizzle the tamarind mixture into the sprouts. Then, toss to coat.
7) Serve and enjoy.
