The Happy Home Cook: Mijo's Oyster Kilaw

Ingredients
8 large oysters (shucked and in half shells)
Sauce/Marination
1/4 cup Coconut Cream
3 tbsp Cane Vinegar
1 tsp shallots (minced)
1/2 tsp garlic (minced)
1/2 tsp ginger (minced)
1 dash Tabasco hot sauce
1 pinch salt and pepper
Parsley Oil
1/4 cup extra virgin olive oil
2 tbsp parsley (finely minced)
1 pc garlic clove (smashed into paste)
1/2 tbsp Calamansi Juice
1 pinch salt and pepper
-Mix all ingredients with a whisk until well combined
Components
1 pc red Radish (cut in thin sticks)
1/4 Japanese cucumber (cut in small cubes)
Cilantro sprigs (for garnish)
Sea grapes (Lato) cut in half
Assembly
- Plate oysters on a bed of crushed ice (sprinkling salt in the ice helps them from melting too quickly)
- Pour a table spoon of the sauce/marinade on each oyster.
- Place half a tsp of cubed cucumber on each.
- Followed by the radish sticks.
- Plate a cilantro sprig on each oyster as well as a pc of see grape.
- Lastly, take a spoon and place each oyster with a drop of parsley oil.
- Place in the freezer for 2 minutes or serve immediately.
